If the flurry of recent restaurant openings and moves by the Prime Hospitality Group didn’t get your head spinning yet (Prime at the Bentley / Prime Grill moving), well, it will now.
In their first foray into the dairy scene, Prime is opening a small pizza joint, Pizza da Solo, a takeout-only pizzeria making 10-inch pies, next door to their Solo restaurant in the Sony Pavilion next week, on Feb 25th. It is the first ever Kosher certified authetic Neapolitan pizza experience, with Chef Giulio Adriani, a double certified chef in authentic Neapolitan Pizza Master by the Associazione Verace Pizza Napoletana and the Associazione Pizzaiuoli Napoletani, at the helm.
With authentic Neapolitan pizza, the dough is briefly flash-fried, toppings are then added and the pizza is finished off in a 1,000º F wood-burning oven. All pizzas will be made using Caputo flour.
The menu will consist of breakfast (pizza with eggs + house-smoked salmon), lunch/dinner, and dessert (including a pizza with Nutella).
Pizza da Solo is strictly Cholov Yisroel and will offer delivery.
Additionally, the Prime ownership will be converting Solo, next door, into a dairy restaurant over the next few months.

Solo Pizza sounds great. Hoping to get there soon. I have never been to Solo, looking forward to going soon.

Wow, I can’t believe Solo is going dairy. What a huge change! I can’t wait to check it out in a few months. I will definitely make the drive to the city for that.
