City Roots Hospitality, the NYC-based vegan powerhouse by Chef Guy Vaknin behind Beyond Sushi, Willow, Anixi, and others, is launching its first Brooklyn location this spring—and it’s nothing like what we’ve seen before.
Opening Wednesday, May 14, 2025, Reverie is a dessert-forward kosher vegan cocktail bar that transforms sweets into edible art. Located in Williamsburg, Reverie is poised to redefine what dessert can be—flavorful, conceptual, immersive, and entirely plant-based.
A Visionary Kosher Vegan Concept
Founded by Chef and entrepreneur Guy Vaknin, City Roots Hospitality has been pushing the boundaries of kosher vegan cuisine for over a decade. With Reverie, the focus shifts to the often-overlooked final course—dessert—brought front and center as the main event.
At the helm of Reverie’s creative menu is Executive Pastry Chef Makenna Hale, who brings a whimsical, nature-inspired approach to her plated masterpieces. Expect courses that explore the elements—like The Sea, The Garden, The Hive, and The Moon—each with intricate compositions that combine color, texture, and flavor in unexpected ways.
The Menu: Dessert as Art, Balanced with Savory Touches
Reverie’s signature dish, The Rainbow, is a sensory journey that celebrates color and nature’s bounty, featuring components like rosewater meringue and ube streusel. The rest of the dessert menu continues this theme, offering guests an elevated, multi-sensory experience.
While dessert is the star, the menu also includes savory bites designed to complement the sweet offerings, creating a balanced and satisfying dining experience.
On the drinks side, Reverie’s cocktail and mocktail program takes cues from its pastry inspiration. Guests can expect bold, dessert-inspired creations that blend classic bar techniques with playful ingredients for a truly one-of-a-kind beverage menu.

Created by Studio RB, Reverie’s aesthetic brings together natural textures and contemporary design, with global influences woven into the decor.
