Fin and Scale is New Haven’s 2nd kosher restaurant to open in a matter of months, with the opening of Ladle and Loaf just a few weeks ago. Head Chef Nixon Sambuaga is ready to use his experience in both kosher and non-kosher kitchens to create an authentic kosher sushi restaurant.
Picky and adventurous eaters are alike will enjoy Fin and Scale since their menu features a large variety of both classic and unique sushi rolls. Some of the restaurant’s creative rolls include the Lightning Roll (spicy salmon and avocado, topped with spicy salmon and avocado, drizzled with a mayo jalapeno sauce), or the Abundance Roll (seared cajun black pepper salmon and avocado, topped with seared cajun black pepper salmon, avocado and mango, drizzled with a mayo sauce). For those who can’t quite decide what to order, diners can order the Omakase and let the chef choose for them.
