Located in the shuk of Machane Yehuda, Ishtabach quickly became one of Jerusalem’s most popular restaurants upon arrival in 2014. Just 10 years later, it opened its newest location in Toms River, New Jersey, just outside of Lakewood.
Ishtabach specializes in making Kurdish-Syrian pastries known as Shamburak. They are hand-crafted and filled with Indian mashed potatoes, varieties of meat, fried onions and chimichurri, finished with eye-catching taboon.
The restaurant offers a vibrant Israeli atmosphere with upscale comfort food. Ishtabach offers specials like Chamin (Israeli cholent), Kube, and Ashpolo, which is an authentic meat dish cooked with rice, chickpeas, and carrots. However, the Shamburak is the signature dish that propelled Ishtabach’s popularity in Israel.
Some flavors include the Siske Shamburak, which is long roasted ribs, seasoned with salt and pepper, in addition to one with brisket cooked in smoked beer. There are a total of 10 Shamburaks available to order.
Ishtabach is located at 2164 U.S. 9, Toms River, New Jersey. It’s open Sunday – Wednesday from PM noon – 11 a.m., and Thursday until 1 a.m.
