- Homemade Cinnamon and Coconut Granola

I always brings snacks with me wherever I go! It’s a running joke in my family that my purse is always filled with candy and crunchy snacks…and not just for my kids. Instead of buying tons of expensive snacks that get devoured in less than 5 minutes, I’ve started making my own recipes at home that will last longer at a much better price. My new favorite on-the-go snack is homemade granola. I can add whatever I’m in the mood for at the moment, from chocolate chips and pecans to flax seeds and sunflower seeds. This recipe for homemade cinnamon and coconut granola has the perfect balance of sweet from the coconut and honey and a bit of salty from the hulled pumpkin and sunflower seeds. It even freezes really well so you can make a huge batch and store in individual snack bags in your freezer. - Grand Finale Chocolate Chip Cookies

You can pack a few in a plastic bag and stuff them into your purse, attache case, overnight bag, or other tote and have a quick nibble whenever you want one. Plus, everyone loves them, so if someone is feeling a little antsy from travel or a child needs a bite of something not especially nourishing but sweet and familiar, chocolate chip cookies are a good go-to. Even if they crumble, they’re still good because you can snack on the crumbles. They don’t spoil quickly so they’re safe for a couple of days, assuming they last that long. My favorite recipe is in my book, Hip Kosher, it’s a blend of oatmeal raisin and chocolate chip cookie. Recently my family protested that there weren’t enough chips in them, so I’ve revised. My response: Grand Finale Cookies (so named because my grandson Zev once looked at all the ingredients needed and he said the recipe was sort of like the grand finale, where there’s a little bit of everything included!) - Energy Bites

So aside from granola bars and pretzels, it’s nice to have something that packs up like a complete meal in one container. My favorite take along foods is this “no mayo” pasta salad, perfect for taking along for a car trip, a plane ride or any time. It is light and filling at the same time and loaded with healthy veggies. I love to use snow peas and peppers, but any veggies you have would work. You can pack it fully dressed and it stays for at least 24 hours. If you need to keep it longer, just bring the dressing on the side and add it later.
